Smoked Trout and Snow Pea Noodle Salad

Preparation and cooking time:25 minutes


  • 400g smoked trout, all bones removed and flesh flaked into large pieces
  • 16 snow peas, trimmed and blanched in boiling water then refreshed in iced water and drained
  • 2 spring onions, sliced
  • 8 cherry or grape tomatoes, halved
  • 2 packets of Chang’s Super Lo-Cal Noodles, rinsed under cold water and drained
  • ½ bunch coriander, leaves only


  • 1 clove garlic, grated
  • 2 tbsp. neutral oil
  • 1 tbsp. mirin
  • 1 tbsp. rice vinegar
  • 1 tbsp. Chang’s Light Soy Sauce
  • 1 tsp. Chang’s Sesame Oil
  • *Alternatively use 2/3 cup Chang’s Oriental Salad Dressing


  1. Gently toss all salad ingredients in a large bowl with enough of the dressing to thoroughly moisten all the ingredients.
  2. Transfer to one large or four small serving plates.
  3. If not using Chang’s Oriental Salad Dressing, combine all dressing ingredients well and reserve.
