Chicken Soup with Bok Choy

Dan Dan Noodles
More of a noodle dish really than a soup this recipe gets its name from the bamboo poles (dan dan) that workers in central China use as they carry loads off the boats on the Yangtze River. It’s made with pork mince and this version features Changs egg noodles. Changs egg noodles are made the age-old way by rolling and folding the dough many times, the noodles have a firm and silky texture.
Spicy Prawn Laksa
It may seem like a little work to prepare the ingredients for this soup but you will be well rewarded with a wonderfully rich flavour.

Vietnamese Beef and Rice Noodle Soup (Pho)
This soup does use raw beef but it is so thinly sliced it cooks in the hot beef stock as it is served. Featuring Changs Rice Noodles (vermicelli) and Changs Bean Sprouts, spring onion, fresh mint and coriander it is both flavoursome and comforting.
