Chinese barbecue pork is available from Chinese grocers and speciality Chinese shops; you’ll see the cooked long, red, roasted fillets of pork hanging in the window. If its unavailable use pork fillet slices the pork thinly and add to the hot wok with the onion and garlic, stir-fry for 2 to 3 minutes and continue the recipe as directed.

Serve this pork stir-fry over a bed of crispy vermicelli. Use one portion from a pack of Changs Rice Vermicelli. To make the noodles crispy fill a medium sized pan two thirds full with vegetable oil. Cook one noodle portion at a time in hot oil. The noodles are ready when puffed, crispy and white. Use to stir through stir-frys or salads or as the base of a stir-fry dish.

A sandpot is a style of ceramic simmering pot, unglazed on the outside and glazed within. The pot is placed over a medium low heat and the contents simmered.
