BBQ Pork Ribs with Hoi Sin
The ribs can be left to stand in the Hoi Sin mixture, in the refrigerator for several hours or overnight. Simmering them beforehand reduces the fat and keeps them tender.

BBQ Tuna steaks in Black Bean sauce with fresh herb salad
Cooking fish on the barbecue is a great idea, but you have to give some thought to which type of fish and which cut for each type of cooking. A delicate small fish like John Dory probably isn’t made for barbecuing and whole fish, like snapper work well wrapped in foil or cooked in the baking dish with the lid down.
To fry or char grill, thick dense and oily fish are all good. Blue eye, swordfish and tuna are all favourites.
The freshness of the herbs and sharpness of the dressing in the salad complement the richness of both the tuna and black beans in this dish
Beef Stir Fry with Bamboo Shoots
Choose garlic chives that are thin if you can, the thicker ones can be woody and unpleasant to eat. If they’re not available regular chives or shallots cut into 4cm lengths are good to use.

Chicken & Vegie Fresh Spring Rolls
To make these into fresh spring rolls, wrap the mixture in rice paper wrappers. You can serve them fresh or even deep-fry them. If you do roll and fry them make sure they are not overfilled. And an adult must always supervise any cooking with hot oil.
