Gluten free vegetable patties
1 Large grated raw onion, 1 Large grated raw potato, 2 grated carrots, 2 grated zuchinis, 1/2 bunch coriander, a teaspoon of g/f Changs soya sauce, 2 tablespoons of ground chickpea flour, g/f Changs garlic chilli sauce, 1 egg, salt and pepper to taste.
Mix all the ingredients together and make into patties and keep in refrigerator for a couple of hours. Lightly fry in peanut oil on one side and gently turn over and fry other side.

Fried rice-vegetarian style
1 cup Basmati rice boiled,cooked and put in baking dish,put in oven for 35 mins. on 150 degrees.Then cut into tiny weeny little pieces a thing called not bacon,which is a substitute for bacon for vegans.Cut the whites only into tiny little slices and put in a bowl.Put some oil in a pan,peferably garlic oil.a little garlic,then fry the not bacon untill really crispy,set aside.Put 2 cups peas in microwave for 4 minutes to heat.Put on stove large pan,put in a little oil and garlic, Put pan on stove and put in a little oil about 2 desert spoons,put in rice,put in half teaspoon mixed herbs,salt and pepper then soy sauce about third of cup,then put in not bacon,peas,spring oinions.Can use a little celery chopped also if wish.Stir alltogether and have lovely fried rice and easy to make.

Thai Coconut Vegetable Parcels
1 T margarine
3 shallots, chopped
1 clove garlic, crushed
1 T floour
1 t curry powder
1 c coconut milk
1/4 t salt
1/2 c cooked soya beans
1 c small broccoli florets,cooked
1 medium carrot, cut into julienne strips and cooked
1 c sliced mushrooms
2 sheets filo pastry
1 T oil
Method
1 Heat marg in small saucepan ,add shallots and garlic and stir over medium heat for 2 minutes.
2 Add flour and curry powder and stir over medium heat for 1 minute.
3 Remove from heat and stir in coconut milk.
4 Return to heat and stir over medium heat until mixture boils and thickens.
5 Season with salt. Stir in soya beans, broccoli, carrot, and mushrooms, cool.
6 Lay 1 sheet of filo pastry on bench place another sheet on top.
7 Brush lightly with oil and fold pastry in half.
8 Place a portion of vegetable mixture onto filo, tuck ends in and roll up.
9 Lightly brush with oil.
10. Repeat with remaining filo and vegetable mixture.
11 Arrange on lightly greased oven tray and bake in a moderate oven for 30 minutes or until lightly browned.
