Fried Rice
(Low fat version)
Fried Rice is easy to make from the ingredients found in your pantry. A good stand-by when you have unexpected visitors for dinner.
Cooking Time 15 minutes
Serves 6 (As a side dish)
Degree of difficulty: easy
2 cups raw long grain rice
¾ cup shallots sliced
1/3 cup peas
½ cup lean short cut bacon diced
50g cooked peeled prawns
1 whole egg
1 egg white
¼ cup skim milk
3 tablespoons Chang’s Soy Sauce Light

Cook rice as instructed on back of rice packet, rinse and drain well. Spread out on tray and leave to dry for a least 1 hour. In a small bowl beat egg and egg white with milk. Coat a non-stick frypan with cooking spray and cook bacon, remove and leave to one side. Re-spray frypan and cook egg mix, remove from pan. Re-spray frypan again and add cooked rice, shallots, peas, prawns, cooked bacon and egg mix, combine well. Add in soy sauce and stir through mixture. Cook 3-4 minutes, stirring frequently.
