Chicken and Cashew Nut

Preparation time:25 minutes


  • 1 tbsp. vegetable oil
  • 100g cashew nuts
  • 1 onion, chopped
  • 2 spring onions, sliced diagonally
  • 2 cloves garlic, finely chopped
  • 1 cup oyster mushrooms
  • 400g chicken thighs, diced
  • 4 tbl Chang’s Oyster Sauce
  • ¼ cup water
  • 1 packet (100 grams) Chang’s Original Fried Noodles


  1. Heat a wok over a high heat then add the oil.Add the nuts and cook until lightly golden.Remove from the wok, and drain on a paper towel.
  2. Return the wok to the heat, adding oil if necessary, then add the onion, garlic, spring onions and chicken. Stir fry the dish for three minutes, or until chicken is golden brown.
  3. Add Oyster sauce, and cook until the vegetables are cooked, and the sauce begins to thicken.
  4. Serve with the Chang’s Original Fried Noodles. For a gluten-free alternative, replace the noodles with rice.
