Salmon avocado and fried noodle salad

Ingredients:

  • 1 pack Changs Original Fried Noodles
  • 2 salmon fillets, skin and bones removed
  • 50g baby spinach leaves
  • 75g cherry tomatoes, halved
  • 1 avocado, thinly sliced
  • 1/3 cup Changs Oriental Fried Noodle Salad Dressing
  • 1 cup snow pea sprouts, to serve

Method:

  1. Heat a little oil in a non-stick frying pan and cook salmon fillets until golden and still a little pink in the centre. Cool slightly then flake into large pieces.
  2. Toss the Changs Original Fried Noodles with the baby spinach and cherry tomatoes.
  3. To serve, arrange salad on serving plates along with the avocado and flaked salmon. Drizzle with Changs Oriental Fried Noodle Salad Dressing and garnish with snow pea sprout. Serve with wedges of lemon.
