- Soften the Changs Long Life Noodles in boiling water then drain and set aside.
- Heat the Changs Chinese Masterstock in a large saucepan with two cups water. Add the chicken breasts and simmer gently until just cooked through. Turn heat off and leave chicken in the stock for 15 minutes. Remove the chicken from stock. Keep warm.
- Stir the noodles and bok choy through the stock and simmer until the bok choy is tender.
- Thinly slice the chicken breasts. Serve with soup, noodles and bok choy. Serve the soup with Changs Sesame Oil and green onions if desired.
Note: If Changs Chinese Masterstock is unavailable, make a simple Asian stock using water, soy sauce, a little Chinese cooking wine and spices such as ginger, garlic and star anise.
