Crispy Hot Chilli Buttermilk Drumsticks

Crispy on the outside and delectably juicy on the in, these chicken drumsticks are covered with crushed Chang's Crunchy Fried Noodles then baked in the oven until golden. With a light hint of spice from Chang's Original Hot Chilli Sauce 280ml they are even more delicious when dipped in Chang's Crispy Noodle Salad Dressing. You can serve these with rice and coleslaw or Chang's Crispy Noodle Salad for a complete meal.



  1. Place buttermilk, Hot Chilli Sauce, paprika and salt in a large bowl and mix to combine. Add chicken drumsticks, stir to coat then refrigerate for 2 hours.
  2. Preheat oven to 200C. Line a large baking tray with baking paper.
  3. Place Crunchy Fried Noodles in a food processor (you can also use your hands or a mortar and pestle) and process until finely crushed, but not powdery. Transfer crushed noodles to a medium-sized shallow bowl.
  4. Remove chicken drumsticks from fridge and dip, one at a time, in crushed noodles. Turn to coat then place on a prepared baking tray about 5cm apart.
  5. Spray drumsticks with oil. Roast for 35-40 minutes or until golden and cooked through. Serve sprinkled with sliced spring onion and Salad Dressing for dipping.
