Dragon Fruit Salad with Prawns
Serves:
4-6
Preparation time:
15 minutes
Ingredients:
200g lettuce salad mix
16 large cooked prawns, peeled, tails kept intact
1 dragon fruit, peeled and cut into cubes
1 red onion, thinly sliced
½ packet
Chang's Original Fried Noodles
,
Chang's Crunchy Fried Noodles
or
Chang's Gluten Free Fried Noodles
Optional: fresh mint leaves
Sauce:
¼ cup
Chang's Crispy Noodle Salad Dressing
3 tablespoons fresh lime juice
1 tablespoon avocado oil or light olive oil
Method:
Prepare prawns, onion and lettuce and place into large mixing bowl.
In a small bowl combine the dressing ingredients, whisk well and pour over salad.
Top with dragon fruit, choice of Chang’s Crispy Fried Noodles and mint. Serve immediately.
