Fried Noodle Salad with Mint, Chilli and Lime

Difficulty:Easy

Ingredients:

  • 1 packet Chang's Fried Noodles
  • ½ Chinese cabbage
  • 6 green onions, sliced on the diagonal
  • ½ cup slivered almonds
  • 1 large carrot, cut into matchsticks
  • 1 red onion, thinly sliced
  • 1 long red chilli, thinly sliced
  • juice of 1 lime
  • handful on Thai mint
  • 2/3 cup Chang's Fried Noodle salad dressing

Method:

  1. Finely shred cabbage and place in large bowl and drizzle with Chang’s Fried Noodle Salad Dressing.
  2. Add green onion, almonds, carrot, red onion, mint, and chilli. Combined well.
  3. Squeeze lime juice over salad, then add Chang’s fried noodles and toss.
  4. Garnish with extra mint and chilli. Serve immediately.
