Rainbow Fried Noodle Salad

Ingredients:

Salad:

  • 1 packet Chang's Fried Noodles 
  • ½ Chinese cabbage, shredded
  • 6 green onions, sliced
  • ½ cup slivered almonds
  • 1 carrot cut into matchsticks
  • 1 red capsicum thinly sliced
  • 1 yellow capsicum thinly sliced 
  • ½ bunch coriander leaves

Dressing:

  • ¼ cup Chang's Fried Noodle salad dressing 
  • 1 tbs Chang's Soy-sauce
  •  Juice of 1 lime

Method:

  1. Combined cabbage, almonds, onions, carrot, red and yellow capsicum in a large bowl.
  2. In a separate bowl combine and whisk well Chang’s Salad dressing and soy sauce.
  3. Drizzle salad with dressing. Toss and combine well, then add the packet of fried noodles.
  4. Squeeze lime juice over entire salad and serve immediately.
