Add Chang’s Sesame Oil, garlic, ginger and green onions into a deep and wide pot and over a low heat, sauté for 2 minutes. Then add Chang’s Original Hot Chilli Sauce, Chang’s Soy Sauce and the diced tomatoes, stock and combine well. Simmer for a minute and then take off stove.
Using a hand blender (or food processor) process until smooth and ingredients have blended well.
Place back into the pot and onto the stove and bring to boil. Add Chang’s Long Life Noodles and cook for 10 minutes. Using tongs, assist to break open the noodles once they have been boiling for 3 minutes. If more liquid is needed, add ½ cup of boiling water.
Evenly distribute between 4 bowls and top with boiled eggs, slices of chilli, coriander leaves, spring onion and a good drizzle of lime juice.
