Wide Potato Glass Noodles with Garlic Chilli Oil

Ingredients:

For Garlic Chilli Oil

  • 2 teaspoons Chang's Original Hoisin Sauce
  • 2 tablespoons Chang's Gluten Free Tamari Light Soy Sauce
  • 3 tablespoons vegetable oil
  • 3 cloves garlic finely chopped
  • 2 spring onion, green and white part sliced separately
  • 3 teaspoons red chilli flakes
  • 1/2 teaspoon red chilli powder
  • 1 tablespoon Chinese black vinegar or substitute with rice vinegar
  • 1/2 teaspoon brown sugar

Topping

  • green part of spring onion
  • 1 teaspoon toasted white sesame seed

Method:

Preparing the Noodles:

  1. Cook the potato glass noodles according to the package instructions.

Make the garlic chilli oil

  1. In a heatproof bowl, add all of the ingredients for the garlic chilli oil EXCEPT the vegetable oil.
  2. Heat the oil in a small pan until it starts to smoke and carefully pour the hot oil over all of the ingredients in the bowl. Once the oil has settled down, give the chilli oil a stir.

Assembly

  1. Drain the potato glass noodles well and place it into a large bowl.
  2. Add the garlic chilli oil, chopped green part of the spring onion, and mix until the noodles are well coated. Sprinkle toasted white sesame seeds. Serve immediately while it's hot.
