Asian Marinated Pork Chops

Asian Marinated Pork Chops

Ingredients:

  • 4 x 250g meaty pork chops, ideally with some marbling through the meat
  • 4 tbsp. neutral oil
  • 350g fresh Asian stir fry vegetable mix
  • White and pale green part of 2 spring onions, very finely chopped

Marinade:

  • 2 tablespoons Chang’s Oyster Sauce
  • 1 teaspoon Chang’s Sesame Oil
  • ½ cup mirin
  • ½ cup Chang’s Light Soy Sauce
  • 2 tbsp. brown sugar
  • 2 cloves garlic, crushed or grated
  • 1 thumb ginger, grated

Method:

  1. Combine all marinade ingredients in a bowl and add the pork chops, mixing well to coat completely then marinate, covered in the fridge for 4-12 hours.
  2. Bring the pork back to room temperature. Brush a medium-hot flat grill with half the oil and cook until just cooked through. Rest for a couple of minutes loosely covered with foil.
  3. While the pork is resting, place the remaining oil in a hot wok and stir fry the vegetables until cooked – just a couple of minutes.
  4. Transfer to plates the vegetables to plates and top with Chang’s Oyster sauce drizzled over and the pork beside the vegetables
